With the Festive Season upon us, we are always searching for something scrumptious to treat those around us. With the help of some seasoned chef's and cooks we have put together a lovely list of sweet treats that are easy to make and full of flavour. Looking for an activity or two to keep the kids busy - these recipes are perfect to get the whole family involved and have some fun together.

 

 

The Springbokkie

 

 

Considering the Springboks winning the Rugby World Cup, we thought it fitting to celebrate this victory again with a delicious tribute pudding which was created by Hannah Lewry, Woolworth's Food Editor.

The Springbokkie promises to have your guests' requesting seconds. No this is not the popular alcoholic shot but is still tantalizingly tasty. This Springbokkie is family friendly and is a peppermint crisp trifle combination.

Ingredients:

  • 2 Packets Woolworths cream soda jelly
  • 1.5 cups of whipping cream
  • 2 x 360g cans Nestlè Caramel Treat
  • 2 x 200g Tennis Biscuits
  • 2 x 150g Peppermint Crisp Slabs, broken into chunks.

Instructions:

  1. Prepare the jelly according to the instructions on the packet. Pour the mixture into a trifle bowl and allow to set in the fridge for a few hours. Use an electric stand mixer to whip the cream until soft peaks form. In a separate mixing bowl, beat the Caramel Treat with a fork to loosen and create a smooth texture.
  2. Fold the caramel into the whipped cream with gentle motions, now add most of the chocolate pieces. Set aside about a cup full for the final decorations.
  3. Place one layer of whole tennis biscuits on top of the jelly and around the sides of the bowl. Cover with a layer of caramel mixture and follow up again with a layer of tennis biscuits. Repeat this process until the bowl is full.
  4. Cover the top of the Springbokkie with the remaining chocolate. Cover and chill for at least 7 hours before serving.

 

 

South African Lemon Fridge Tart

 

 

No bake, no crust, fast and easy, just sounds too good to be true. Especially during the warm December holiday, the last thing anyone wants to do is slave away in front of the stove. This South African Lemon Fridge Tart is greatly refreshing.

Ingredients:

  • 375ml sweetened condensed milk
  • 500ml custard
  • 200g tennis biscuits
  • 40ml lemon juice

Instructions:

  1. In a mixing bowl place, the condensed milk and 5ml of lemon juice at a time while mixing thoroughly. After adding every 5ml, have a taste and add until you have achieved your preferred lemon zestiness.  Put aside, but do not refrigerate.
  2. Make 500ml Custard.
  3. At the bottom of a 20 x 30 ceramic dish place your tennis biscuits. Spread approximately a 1cm custard layer over the biscuits without disturbing the biscuits positioning. Add another layer of biscuits over the custard layer, now spread some lemon mixture over the cookies. Repeat this process until the bowl is full or until you have run out of ingredients.
  4. To decorate, crush one or two cookies and sprinkle over the

 

 

Mango Coconut Frozen Yogurt

 

 

December in South Africa always brings lovely warm weather and what better way to keep you and the family cool, than with a tropical frozen yogurt. Better yet, this is an easy option to make almost anywhere. With FairCape Dairies you can create a frozen yogurt that is bound to become a staple in the home.

Ingredients:

  • 1 Litre (4 cups) frozen or fresh Mango
  • 250 ml (1 cup) Fair Cape Dairies mixed Fruit and Custard Yogurt
  • 125 ml (1/2 cup) coconut milk
  • Toasted coconut flakes for garnish

Instructions:

  1. Add all the ingredients into a blender. Blend on high speed until the consistency of the mixture is smooth.
  2. Pour the mixture into your freezer safe dish.
  3. Ensure you freeze the mixture for 5 - 6 hours or overnight.
  4. Before serving allow the yogurt to soften slightly, to ensure easy serving.
  5. Sprinkle toasted coconut flakes over for decorations
  6. Enjoy

 

 

Quick Braai Pudding

 

 

Braai time is always a good time. What makes it a great time is a quick pudding that is possible to make anywhere. This recipe is ideal for the holiday season on a family holiday away or while camping because it is easy to whip up and will always put a smile on everyone's face. Ice-cream is a lovely accompaniment as it creates a good balance during the warm summer season.

Ingredients:

  • 200g chocolate cookies such as Romany creams crushed
  • 1L bought custard
  • 90g dark chocolate crushed in smaller pieces (optional)
  • Strawberries cut in half (optional)

 

 

Instructions:

  1. Put the crushed chocolate cookies in a stain free tin bowl (could also be a tin cup for individual portions) cover the cookies with custard and allow to soak for 1 hour until cookies have softened.
  2. Place the bowl over medium coals to bake.
  3. Sprinkle dark chocolate and strawberries over.
  4. Serve warm

 

Fun Fruit Fondue

 

 

While relaxing snacking is always a treat. A fruit fondue is a great way to keep things healthier and fun. The options are endless and quite affordable because you have free reign to decide which fruit you want to dip into a smooth and creamy chocolate dip.

Ingredients:

  • Fruit of your choice - apples, seedless grapes, bananas and strawberries are always good options
  • 425g of shop bought custard
  • 75g milk chocolate

Instructions:

  1. Wash all fruit
  2. Cut all fruit into bite sizes
  3. Pour custard into a medium size pan and add the chocolate. Heat slowly and stir constantly for about 5 minutes, until the chocolate has melted. Remove from the stove and allow to cool slightly.
  4. Pour chocolate into a medium sized bowl and place on the table. Arrange fruit around the chocolate bowl. Place fondue forks nearby to pick up the fruit and dip.
